Curd (yogurt): 2 tablespoons

Ghee (clarified butter): 2 tablespoons

Bay leaf: 1

Whole spices: 2-3 cloves, 1 cinnamon stick, 1 cardamom

Cumin seeds: ½ teaspoon

Turmeric powder: ¼ teaspoon

Salt: To taste

Water: 2 cups

Steps to Make Veg Sawhchiar

Here are some quick steps that go into the making of a yummy Veg Sawhchiar recipe:

1. Wash and Prepare Rice:

Wash the rice thoroughly and soak it in water for 15 minutes. Drain and set aside.

2. Saute the Spices:

Heat ghee in a pan. Add bay leaf, cumin seeds and whole spices to the moderately hot ghee, and let them sizzle for a few seconds.

3. Add Onions and Paste:

Toss in the sliced onions and saute until golden. Add the ginger-garlic paste and stir for about a minute. The paste's raw smell should disappear.

4. Cook Tomatoes and Spices:

Add the chopped tomato, turmeric powder, and a pinch of salt. The tomatoes should become soft and mushy.

5. Veggie Mix:

Add the veggies, mix and stir well. Cover and cook for about 5 minutes on moderately low flame.

6. Combine Rice and Curd:

Add the soaked rice and curd to the pan. Coat the rice with the spices as you mix gently.

7. Add Water and Cook:

Pour 2 cups of water into the pan. Add salt to taste. Cover on and let it cook on low flame for another 15-20 minutes, or until the rice is fluffy and the water is absorbed.

8. Fluff and Serve:

Turn off the heat. Serve warm.
