● 1-2 tablespoons oil (preferably coconut or vegetable oil)
● Salt to taste
● Water (if using rice flour)
● Fresh coriander leaves for garnish (optional)
If you're using rice flour, mix it with water to form a smooth batter. If you have leftover idli or dosa batter, you’re good to go.
Place a non-stick tawa or skillet on medium heat. Once it’s hot, lightly grease it with a little oil.
Take a ladle full of batter. Pour it onto a moderately hot pan. Now, spread it into a thick round shape. It will look like a pancake.
Sprinkle a generous amount of podi over the batter. The amount of podi can be adjusted depending on how spicy you want it. The podi will give the uttapam its signature flavour.
Now, sprinkle finely chopped vegetables (like onions, tomatoes, or carrots) on top of the uttapam. Press them lightly into the batter.

Once both sides are cooked and crispy, remove the uttapam from the pan and serve it hot. Garnish with fresh coriander if desired.
