• Oil to fry (2 tsp)

Recipe for Water Chestnuts

The steps involved to prepare this dish:

1. Boil the water chestnuts.

2. Remove the flesh from the boiled water chestnuts.

3. Chop the flesh and put them in a mixing bowl.

4. Add in the other ingredients like corn starch, refined flour, red chilli powder, and salt and mix thoroughly.

5. Heat oil in a skillet, and deep fry the coated chestnuts until crispy and golden brown.

6. In another bowl, mix the sauces (i.e., sweet chilli sauce, tomato ketchup, and soy sauce). Add the black pepper powder and about 1 tablespoon of water. Whip and mix, then set aside.

7. Heat oil in a pan and add the minced garlic and ginger. Sauté well.

8. Add in the sauce mix and the fried chestnut fritters. Mix well, coating the fritters generously with the sauce. Always remember to keep the flame low during this step.

9. Garnish with the chopped spring onion greens.
