Here we go with the steps to make the dish:
Boil the vegetables and potatoes until they are soft. Mash them together and set aside. If using fish, steam or cook it and mix it into the mashed vegetables for a unique flavour. Season with a pinch of turmeric and salt.
In a mixing bowl, combine the rice flour, grated jaggery, and cardamom powder. Slowly add water to form a dough that’s smooth and soft. Ensure the dough is not sticky or too dry.
Distribute the dough into small portions. Flatten them into discs. Place a spoonful of the vegetable or fish filling in the centre of each disc. Gently fold the edges over and seal the pitha into a packet.
Grease a steaming basket or plate with a little ghee. Place the stuffed pithas on it and steam them for about 15-20 minutes or until they are firm and cooked through.
Once the Eromba Pithas are ready, let them cool for a few minutes before serving.
