• Fresh Spinach – 2 bunches
• Fenugreek leaves – ½ bunch
• Green chillies – 3 (chopped finely)
• Oil – 2 teaspoons
• Garlic cloves – 3
• Ginger – 1 teaspoon (chopped finely)
• Cumin seeds – 1 teaspoon
• Coriander powder – 1 teaspoon
• Turmeric powder – ½ teaspoon
• Hing – a generous pinch
• Rice paste — 1 tablespoon (rice powder mixed with very little hot water)
• Curd – 2 tablespoons
• Water and salt – As per your requirement
• Clean the spinach and fenugreek leaves thoroughly to remove sand and dust particles.
• Boil the leaves for a few minutes. Put the leaves in a blender, add the green chillies, and blend to a puree-like consistency.
• In a pan, add some oil. Once the oil is hot, add Hing, cumin seeds, ginger, and garlic. Fry for a minute before you add the other ingredients.
• It is now time to add the spinach and fenugreek leaves puree, coriander powder, turmeric powder, and salt to the pan. Add water depending on the quantity of the kafuli you want. Let all the contents cook well and boil.
• Once they start boiling, add the curd and rice paste to the pan. Kee the flame low and cook for a couple of minutes. You can still add water to the Kafuli at this stage if it is too thick.
• Before serving, add a few dollops of cream to the Kafuli and serve it with roti or rice, according to your taste.
