• To blend the chillies into a fine paste, soak them in hot water for 1o to 15 minutes.
• In a blender, add the ginger paste, chilli paste, and cheese. Blend the ingredients well to form a smooth paste.
• In a pan, add some oil. When the oil becomes hot, add this paste and stir well to avoid cheese sticking to the pan. Keep the flame on low and stir for a minute so that the raw smell of the chillies and ginger goes away.
• Add the finely chopped spring onions immediately into this mixture. Turn off the flame after a minute.
• Now, add the rice to this paste and mix well to form a wholesome dish.
• You can garnish with a few coriander leaves before serving.
Some variations you can try:
• You can use freshly-cooked rice, or rice leftover from the previous day for making Kharzi.
• You can use any type of rice, but ensure it is cooked very well before using it for making this dish.
• If you don’t have Mozzarella cheese, you can use any type of fermented cheese.
• You can boil some green peas, carrots, and other vegetables of your choice separately. Add these vegetables along with the rice into the paste. This makes the dish more healthier.
• When making the paste, you can also add 3 or 4 cloves of garlic and one tomato for additional flavour.
• This dish works well on its own, but you can serve it with fresh curd and a simple salad.
